AnimalPlanet Virtual Pet Parade

May 5 is Cinco de Mayo and while I may not be attending a party or happy hour to celebrate the occasion I will be festive with food.

Tostito's sent along some tasty recipes to with their Hint of Pepper Jack and Artisan Roasted Garlic and Black Bean Tortilla Chips!

New Age Guacomole-
Ingredients:
1 prepared recipe TOSTITOS® DIP CREATIONS™ Freshly Made Guacamole Dry Dip Mix
2 tb oven roasted tomato, 1/4 diced
2 tb minced shallots
1 tb minced serranos
2 tb chopped cilantro
2 tb lime juice
1/4 cup mango, 1/4” diced
Instructions:
Fold all the ingredients into the prepared guacamole. Serve with Tostitos Hint of Pepper Jack

Avocado Hummus
Ingredients:
Avocado Hummus:
2 large avocados (or 3 small)
3 tbs real lemon juice or other lemon juice from concentrate
1 clove garlic crushed
1 ½ tsp kosher salt
4 tsp tahini
4 tsp olive oil
1/4 tsp ground cumin
Pinch of ground coriander (optional)
Pinch of cardamom (optional)

Pumpkin Seeds:
1 cup pumpkin seeds
½ tbs canola oil
½ tsp New Mexican chili powder
¼ tsp kosher salt
Pinch ground black pepper

Instructions:
Avocado Hummus:
Place all ingredients in a food processor and blend until smooth. Spread the Avocado Hummus into a serving dish. Sprinkle evenly with pumpkin seeds and chopped cilantro. Squeeze one or two lime wedges over the top and garnish with additional lime wedges. Serve with Tostitos Artisan Recipes Roasted Garlic and Black Bean tortilla chips.

Pumpkin Seeds:
In a large sauté pan, heat the canola oil over medium heat for 2-3 minutes, add the seeds and spices, toast for 4-5 minutes allowing the chili and spices to adhere to the seeds. Cool the seeds on a sheet tray. Coarsely chop.

Pumpkin-Ginger Pancakes- By Ellen Easton, Courtesy of Nielsen-Massey Vanillas

2 TBS. butter, melted
1 large egg
1/2 tsp. salt
1 cup milk, room temperature
2 TBS. Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
1/4 cup Walnuts, natural, crushed to tiny pieces
1/8 cup Ginger People crystallized ginger, crushed to dust size pieces
2 TBS. ground cinnamon
1 1/2 cups King Arthur Pumpkin Pancake Mix

Melt butter over a low heat. In a medium size mixing bowl, add next eight ingredients. On a medium speed, slowly add pumpkin mix, blending together until combined. It is OK if batter is a bit lumpy. On a preheated hot skillet, place 1/4 cup of batter for regular size pancakes or one heaping tablespoon for mini pancakes, allowing room in-between each. When small bubbles appear on the top, flip over for 30 seconds or until cooked through. Remove and serve with slices of fresh pear and maple syrup.

Garnish: fresh sliced pears and maple syrup

I add vanilla to my pancake batter, protein shakes and coffee. It makes so much taste so wonderful. Real vanilla too. Not that cheap imitation kind either.

Fun, Frugal Father's Day Tips

My husband has asked for a grill for Father's Day. Not the most frugal of gifts however our $99 Walmart grill has lasted us eight years and I think we got our money's worth. It's survived four moves too. It's the little grill that could. In addition to that less than frugal of purchase my original plan was to do this for Father's Day.

1. Let Dad sleep in. We trade off most weekends but he'll get some extra sleep time that weekend. Sleep is free!

2. Make Dad his favorite dinner and/or breakfast and/or dessert. This is something the kids can get in on too and it's a real treat and economical too. As long as Dad's fave food isn't beef wellington or shark fin soup.

3. The kids will make the card. It's fun for them, keeps them busy and makes them proud. It also saves me about $6.

We also might take advantage of our community's free pool access or take a walk on some of the trails near our home. All of it is fun, free and allows us some good quality family time. Letting Dad nap without being bothered or watch a ball game is always a good bet too.

PBN- Positive Spin Books for Kids

If you have been looking for a way to positively explain holidays to your kids then you have struck the motherload with Positive Spin Press books written by Lisa Sferlazza Johnson and illustrated by Tucker Johnson. Each of the their three books, 'All Hallows Eve, The Story of the Halloween Fairy', 'Winter's Eve Love and Lights' and 'Christmas Eve The Joy of Giving' teach children about doing things for others while revealing the origins of each special day and all accompanied by bright and imaginative illustrations. The fact that the author and illustrator live in Rhode Island held no sway with me I swear! Though I do love that they come from my home state.

I first read 'All Hallows Eve The Story of the Halloween Fairy' ($15.95) to my daughter right around the big day and found the explanation of how trick or treating began to be a positive, fun-filled story. Eve, a fairy from All Hallows has a birthday and only wants candy for her special day. Except all she can make is toys. No matter how hard Eve tries she can only produce toy candy. Her friends decide to go door to door in All Hallows and ask neighbors for candy as presents to Eve. One fairy, who has no candy, creates a special trick to show Eve. This book is a lot of fun and one I enjoy reading to my child and she loves just as much. It's full of beautiful fall-colored illustrations and possesses only happy and not scary elements on this typically creepy, crawly day.

Christmas Eve The Joy of Giving ($15.95) is another great book by this duo. I particularly loved how the main message isn't about giving or even what you give but how no matter how small your gift is it can bring joy and aid to someone. It teaches children how important it is to focus on the giving rather than the getting during the whole year and not just when Santa (or parents)might be watching.

Winter's Eve Love and Lights, my favorite book in the trio, has Eve learning about all the different ways we celebrate holidays during the month of December. Suffering from a case of the winter blues Eve learns the joys and customs of many holidays like Kwanza, Chinese New Year and Diwali just to name a few, from her friends who have gone to visit family in other parts of the world. She discovers that there is light in each holiday that can warm your heart and sustain you through the winter. It's quite a charming way to introduce and explain other customs and traditions to your child. You might just learn a thing or two as well.

I can't wait to read these books to my kids around each of their designated special day as well as throughout the year. They don't just explain holidays but teach the value of being kind to others, the benefit of having friends and how to work with your community. All incredibly valuable lessons to learn at any age. My eldest child, who is almost three, just loves these books! In fact, while I was writing this review she was a bit upset that I might be keeping the books for myself. I think the set makes a great gift for any kid but each book stands alone as a good gift too. They are definitely worth looking into further.

Thanksgiving on a Budget!

From the founders Lisa and Christine at PetitePalate, the makers of gourmet baby food, comes ten simple tips for a budget concious or friendly Turkey Day. And couldn't we all use a refresher no matter what the economic climate?

#1. Go potluck. Not only is this a huge cost-saver, it’s also a great opportunity to hold a pre-Thanksgiving gathering. Invite participating potluck-ers over to create an ultimate Thanksgiving menu, complete with everyone’s favorite dishes. Then, assign a dish to each person (because no one needs three portions of candied yams!).

If potluck just isn’t an option, try these tricks to keep the meal gourmet, natural, and cost-effective:

#2. Buy produce, including herbs, at a farmer's market. This allows you to cut out the middleman mark-up, plus you’ll be supporting local agriculture. Talk to the farmers and see how the food was grown. If you buy eggs, dairy or meat at the farmer's market, you can ask how the animals were raised and whether they were organically grown or grass fed. Extra Helpings: Hit the farmer’s market near the end of the day – the farmers will be eager to sell off their remaining inventory, putting you in a prime position to haggle for a better deal. The food will taste FRESH and delicious! Try a site like LocalHarvest.org to find a farmer’s market near you.

#3. Focus on quality, not quantity. “Every Thanksgiving, my mother use to make enough food to feed an army,” notes Lisa. Leftovers are great, but going overboard often results in excess food being thrown away. If your family is small, try cooking just a turkey breast (with skin) on the bone instead of a whole bird. Or, if you are like Lisa, and LOVE dark meat, then try buying a half bird - you'll get one huge juicy breast and one thigh/leg.

#4. Get your bird from a local butcher. Butchers often carry high quality free-range or even wild turkey, and they’ll give you a fair price. They can also prepare the meat however you need it, allowing you to reduce waste. Christine: “I find that butchers have much better quality meat than grocery stores. They are closer to the source, meaning they have a better understanding of the meat that’s in their store – it sounds strange, but it’s true!” Extra Helpings: Start frequenting your local butcher on a regular basis. Once you develop a personal relationship, you can ask him/her to alert you early of good deals.

#5. Make a list. Avoid spending money on extra and unneeded supplies by planning your menu and creating a shopping list before you head to the grocery store. Check off the items as you put them in your cart to eliminate any mid-recipe drama (“I could have sworn I bought poultry seasoning!”). Extra Helpings: Try dividing your list into grocery store sections – produce, canned goods, dairy, etc. It saves loads of time and also reduces the chance that you’ll overlook something.

#6. Eat first, shop second. Never go to the grocery store on an empty stomach. Having something in your belly prevents impulse hunger buys that can bulk up your bill.

#7. Make your own stock. Don’t be intimidated by this one – it’s actually pretty simple, and significantly cheaper than the store-bought version. Use the scraps and bones from the bird and other chicken meals from earlier in the week, along with leftover vegetables and herbs that would otherwise be thrown away. Lisa: “I use homemade stock in just about everything: it tastes better than store-bought, and I can control the ingredient levels (less salt, no additives).” Extra Helpings: Cooking potatoes, yams or risotto in stock adds a delicious depth of flavor, and homemade stock, along with scraping from the roasting pan, yields the best gravy.

#8. Make it BYOB. Supplying alcohol for a crowd can get expensive, so don’t be bashful about asking guests to chip in by bringing a bottle of wine. Everyone appreciates the fact that you’re preparing dinner, and this way, they get to bring exactly what they like. (This is what in-laws are for!)

#9. Decorate with nature. There’s no need to purchase expensive centerpieces. Instead, look to your own backyard or a local park for colorful leaves and aromatic pinecones. Add in a few inexpensive gourds to create a one-of-a-kind seasonal display. Extra Helpings: A homemade centerpiece is a perfect project to keep the kids entertained while they’re waiting for dinner to be served. They’ll be proud of their creation and you’ll have one more holiday memory to treasure. (We're doing this at my house too. What kid doesn't want to help out?)

#10. Make the meal from scratch. If ever there is a time to roll up your sleeves and dig in, Thanksgiving is it. Throw on your favorite CD, open up your cookbook and hop to it! Forgoing the boxed stuffing, instant potatoes and canned gravy will cost less money and taste better, plus, you’ll be able to control the ingredients. Extra Helpings: Does cooking an entire Thanksgiving meal from scratch sound like a daunting task? Make it easier on yourself by enlisting help from family members. Little ones can set the table, while older kids and spouses/significant others can peel vegetables, measure spices and mash potatoes.

10. Keep it SIMPLE! We’ve saved the most important tip for last. Don’t go crazy preparing an endless array of complex, time-consuming recipes. Opt for one extra-special side that you know everyone loves, and then focus on a select number of straightforward dishes (baked sweet potatoes, simple bread stuffing, corn niblets) that are appealing to the eye and the palate.

Fun Find- Adventures from the Book of Virtues- A Christmas Carol for Annie

This animated DVD ($14.98) is a great way to teach kids about the true meaning of Christmas. The story revolves around the main character, a girl named Annie, who in an attempt at being elected president of her school's drama club loses her way and the meaning behind the Christmas holiday.

Geared for children of all ages and based on the Zach and Annie characters from the PBS series this is a great DVD for everyone in the whole family. It is perfect for viewing this time of year and teaches valuable lessons.

Fun Find- Sail the South Seas

In a stump about what to get for dear old Dad this Father's Day, June 15? Think that the idea of dousing him with cologne is a bad idea? Not so. Try the Set Sail the South Seas cologne by Tommy Bahama, which is a relaxing scent that brings to mind the water and a pleasing citrus air.

My husband, NEVER wears cologne. It is just not him. I'm quite pleased with it as a whole.

Mo Willems the creator of the pigeon series, which are some of the most-loved books in our house, now has Knufflebunny on DVD ($14.95). In case you are not aquainted with Knufflebunny it is the humoreous story of a little girl named Trixie who looses her precious bunny, Knufflebunny. The hand drawn images by Willems are set against black and white photos of a typical city which gives this children’s book a sliglhtly more edgy and modern feel to it. It was also the 2007 Andrew Carnegie Medal for excellence winner in children’s videos. You can’t beat that. My daughter loves the book version and couldn’t believe it when she was able to watch the story on the big screen. The voices are beyond cute. This read-along DVD is a favorite in our house just like the book. Besides this great story there are six other stories included in this 68-minute disc. Geared for children ages 2-8 with stunning and diverse types of animation you can be sure that any child would love this storybook treasure.



Looking for something less hip and modern but still in DVD read-along form? Try Scholastic’s ‘Diary of a Worm’ DVD. Faithfully adapted from the best-selling Doreen Cronin book you can get this DVD for $14.95 along with four other books included. The interactive menus, read-along format, and long running time of 69-minutes will keep your child entertained enough to let you get in a rather luxiourous shower. You just might be able to lather, rinse and repeat! I was so excited to find ‘Frog Goes to Dinner’ by Mercer Mayer and ‘Anatole’ by Eve Titus included on this DVD. I adored them both as a child beating a path to the shelf they were on each time I visited my local public library. I’m so happy I can share these stories with my child and see her excitement and joy over them too.



Last but certainly not least, Scholastic brings you ‘Noisy Nora’ by Rosemary Wells. This story of sibling rivalry is humorous and delightful. This little mouse sure can get into mischief when she wants attention. I can relate! There are three other stories included on this 55-minute DVD. ‘T is for Terrible’, ‘Cannonball’ and ‘Goggles!’. Each one teaches a lesson of friendship or how things might not always be what they seem. It’s a truly enjoyable DVD for only $14.95.

Little Empress Couture- Elegance for Little Ladies

The holiday season will soon be upon us. Off we will go to special events where pictures are taken that will last a lifetime. Why not indulge a little? Buy your little girl something truly special to wear, like an outfit from Little Empress Couture. Becky, the designer of Little Empress, believes in the finer things. She has a passion for embroidery and Dupoini silk that truly shines through in all her creations. Combine the two and you have some simply divine clothing.



Each item is made by hand using Dupioni silk and embroidery thread. Her designs allow her to let her imagination run wild as she creates clothing that is inspired as well as all out adorable. Every time I look at one of Becky’s new pieces I swoon. While pricey, the amount of work and care that goes into each piece can immediately be seen. The outfits are something out of a fantasy and any little girl would be lucky to own one. The items are true originals and she uses professionally serged seams and French seams.

So maybe you are asking- what is Dupioni silk anyway? Why is it so great? As Becky states, “Dupioni silk is produced when two or more silkworms spin their cocoons closely together. It has a moderately crisp hand, fairly reflective luster, and a knobby texture which sometimes makes the fabric look flawed. But that is the beauty of Dupioni silk! Any item by Little Empress (especially the new autumn collection!) would make an ideal gift or outfit worn for a special occasion like a wedding, holiday party or for family photos to give as gifts. That is exactly what I plan to do with the outfit that Becky sent to me for review. This gorgeous little fall number begs to be photographed! The rust colored silk pants have an elastic waist and are sized quite nicely. My daughter runs tall and lean, and the pants are perfect on her. The additional embroidery of the word ‘hoot’ on one leg is incredibly sweet and whimsical. The iridescent cream trapeze peasant top has the most precious owl delicately embroidered in the center with a golden beaded beak. It comes complete with a rust colored sash that can be worn with the outfit or not. The fit is great and the ensemble as a whole is quite impressive. The detail work on these items is incredibly fine. The stitching and seams are perfect and the idea to use the Dupioni silk is ingenious! At first it seems so impractical for a child, but once you see these little pieces of heaven you just want to indulge and purchase them.
